World Renowned Academy of Chocolate Awards

I am thrilled to share some exciting news… I have won two silver awards from the globally acclaimed Academy of Chocolate! 

My first Silver Award was for the collaboration with Downton Distillery and their Explorers Gin. Flavours of juniper and citrus blend sumptuously with my unique ganache centre,  made with a 38% milk chocolate, from a Swiss company who work directly with the Franceschi family in Venezuela. 

The second award celebrates the iconic sea salted caramel which has become a modern classic, a truly indulgent, satisfying temptation that tastes like no other.

Each chocolate is hand-crafted using moulds. The design of the chocolate is airbrushed with coloured cocoa butter before tempering chocolate to create the shell to add the centres.

About the Academy of Chocolate…

The Academy of Chocolate was founded in 2005 by five of Britain’s leading chocolate professionals, united in the belief that eating fine chocolate is one of life’s great pleasures. The Academy campaigns for better chocolate and to promote a greater awareness of the difference between fine chocolate and the mass-produced chocolate confectionery which most of us eat.

As well as these prestigious awards I  was very touched to receive this quote from Keith Hurdman, a legend within the industry, and an icon I have always admired. I guess if this was ‘Strictly’ Keith would be on a par with Craig Revel-Horwwod at giving praise!  I did have a tear in my eye reading it, as a small artisan business I constantly strive to innovate and these awards are a huge achievement for me.

Learn how to make chocolate bonbons with a choice of centres; either sea salt caramel or plain caramel. Use cocoa butter colours and create your own cocoa butter designs to decorate them.
