10th Year Anniversary!

…From Small Beginnings

It’s my 10th year in business! Day one of Chocolate By Miss Witt was 21st July 2012.

I remember the week clearly as I had decided; Where better than to test out my chocolate recipes but the Saturday market of the beautiful coastal, Georgian town of Lymington.

I had originally intended to start the week before but the Olympic torch was heading through the high street, so it got priority!

My first chocolates got a great reception from the locals and visitors to the market that Saturday. My market stall looked nothing like a market stall at, all the chocolates were placed individually on silver mirrors to reflect their beauty, and each chocolate was a single piece of artwork. I had spent hours proudly perfecting them.

I experimented with flavours. All of my recipes were made with either a water ganache instead of cream (the centre inside the chocolate) or filled with a fellow local producer, Naked Jam’s wonderful marmalade.

From day one my mission was to change people’s perception of what real chocolate is, for example, just because dark chocolate is 70%, it doesn’t mean it is of any quality. Reasons for this- cacao beans can be over roasted, or from poor quality varieties. I wanted to introduce the British chocolate buyers to top-quality chocolate, and give them the chance to taste the true difference between standard British chocolate, and the pure, quality sourced, locally harvested and exquisitely produced chocolate with honourable origins from various cocoa-producing regions around the equator, across the whole globe.

I tested out many recipes in those days, two of my original recipes were my Rose Garden Milk Chocolate and the Earl Grey Tea Chocolate, which are still in my Signature Collection today.

Other flavours that were tested were Sweet Red Onioned Marmalade Chocolate, which divided opinions! Rosemary and Sea Salt chocolate, Seaweed Scented white chocolate, Plum & Amaretto and many more.

To celebrate this 10-year anniversary, I have the signature collection of chocolates available from my store which features the two original flavours, Rose Garden Milk Chocolate and the Earl Grey Tea Chocolate alongside:

Over these ten years, I have met so many lovely clients through having the market stall or pop-up shop as I liked to call it.
